Butternut Squash Cheezy Sauce

Butternut Squash Cheezy Sauce
• 2 cups organic butternut squash
• 1 TBSP organic white miso
• 2 TBSP nutritional yeast
• 1/4 cup soaked organic cashews
• 1 organic garlic clove
• 1/4 tsp organic turmeric
• 1/2 tsp organic curry powder
• pinch of organic white pepper

Soak cashews. Cut, peel, & boil squash for about 10 minutes. Drain and add to blender with drained & rinsed cashews + all other ingredients. Blend well, scraping down the sides if needed. Mmmm the kitchen is full of delicious smells. Use to make up a plate of nachos, fill a bowl for dipping, or use in a variety of seasonal dishes as a dip or sauce. Feel free to adjust the spice level, but this was perfect for my little vegans. Beautiful mix of sweetness from the squash plus the lovely hint of curry spice. Enjoy!
