Fiesta Bowl with Beanfields White Bean Chips

This fiesta bowl is fun and easy to make. The majority of work is preparing all of the ingredients and then combining everything together. This is a great meal idea to have prepped before a guests comes over, and then you can whip it up in front of them. Impressive!

You will need:

1/2 cup of cooked black beans (rinsed)

1/2 blanched edamame

1/2 blanched corn

A large handful of cherry tomatoes, some whole, some sliced

1-2 cups of Beanfields Snack's chips (I used the White Bean, but the Nacho or Pico de Gallo would work well)

3 sprigs of cilantro (rinsed well!)

Chive flowers (you can use chives)

Broccoli Rabe flowers (you can skip this if you can't find it)

1 watermelon radish sliced

1/2 an avocado, sliced into chunks

1/2 of micro carrots (or diced carrots)

1/2 juice of one lime

Sea salt to taste

Optional: Sprinkling of nutritional yeast and a few dashes of hot sauce

Once all of the vegetables are prepped and ready to go, start assembling the bowl anyway you see fit. The point is to have fun! Start by piling different sections until the bottom is filled: a scoop of black beans, a scoop of corn, a scoop of edamame. Then start adding your tomatoes. I keep the smaller one's whole and the large ones I slice in half. Next stud in as many chips as you'd like! Then add the rest of the prepared vegetables and herbs. To finished squeeze the lime over the bowl and sprinkle with sea salt as desired. You can then add a sprinkling of nutritional yeast and hot sauce if you see fit. Enjoy!
